Hot, Fresh Spinach & Artichoke Dip

1 tbs. olive oil
1/2 med onion chopped
1lb. fresh spinach chopped (stems removed)
3 cloves garlic crushed
garlic salt
red pepper
basil
1 can / jar artichoke hearts drained & chopped

Heat oil in pan over med heat.
Add onions, garlic salt, red pepper, basil.
Sauté until onions are transparent.
Turn heat down to med low.
Add spinach & garlic.
Stir until spinach is tender (10 min).
Add artichoke hearts.

1 package Philly cream cheese
1/2 cup grated Jack cheese
1/4 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup mayonnaise
1/2 cup sour cream

Soften cream cheese in microwave 30 sec.
combine above ingredients.
stir in spinach and artichokes.

Preheat oven to 350*.
Place combined mixture in glass baking pan.
The bigger the pan the more it will spread out
and allow for more crispy top!
Bake for 20 min.

Place 1/4 cup grated Parmesan cheese on top.
Place under broiler for a few minutes.
Make sure to keep an eye on it so it gets crispy
and doesn't burn!

Enjoy with pitas, garlic bread rounds, tortilla
chips, or add to a sourdough bread bowl & enjoy!
